I know this is going to be a dumb question, but, are table end finials made and then cut down the center, or are two pieces of wood joined and turned at the same time? :?

Normally joined using paper and glue. The glue line is later split through the paper after turning.

So you would run them through a bandsaw?Yes. We normally fit a rail down the sides so that they stay straight and square and rip them in half.
Sand the bandsaw cuts to neaten them up.
