Is it necessary to seal the inside where the salt or pepper comes in contact with the wood
Timbers to be used are Huon pine & Tas blackwood & perhaps Bull Oak

IMO yes. The last thing you want is sawdust to timber scent (for the Huon) going into the pepper/salt. I use a couple of coats of Ubeaut's Hard Shellac, or a single coat of Rustins Plastic Coating, they are both food safe
