My first one, cooked on a friend's oven in Hobart.
The BBQ/Oven was there when they bought the place last year.

I can't give you the recipe 'cos I didn't put it together, I just cooked it.

Now I want to build a wood fired pizza oven up here.

sounds like your next project cliff:cool:

they taste nice dont they...theres a place out here in the vineyards that makes them and they taste awesome ( fairly exy to! $20 plus for a pizza:( )

12.5 kilo strong plain flour with at least 12% protein
6.5 ltrs of water (cold)
250ml olive oil
handful of salt
70 grams of fresh yeast

add yeast to liquids
add flour all at once
blend with hook attachment for around 8 mins on slow speed
scale/weigh out and shape as desired

cook in woodfired oven with favorite toppings
oven should be around 220-240c
garlic/ herb breads ..around 6 minutes
pizzas around 7 mins

Strewth MOT, how many pizzas does that make? :oo:

We made 2 & couldn't fit them both in the oven at once.

The first one was in there a bit too long, it is the one in the pic, the second wasn't so 'suntanned.'

I found that about 15 to 20 minutes was the best with that little oven.

We had an oven in the old shed I just knocked down.

I love wood fired pizza and we had nights with stacks of friends over just cooking pizza. Then we got somewhat under the weather so to speak.

I will be building a new one soon enough.

BTW- who's the guy in the picture? Is that Percy?

Hello Cliff,

Fired my oven up over Easter. It's based roughly on the Traditional oven design. Pizza cooks in about 90 secs. Not limited to pizza you can cook anything you would in a normal oven. Best thing I ever built.

Fresh garlic bread too cooked in pizza oven

also Naan bread

stick in a Hot Pot or two of curry :2tsup:

why limit the use.

Gee if I had been looking for you Cliff at The Turn Fest I'd have been looking for a young fella who looks like a picture from a photo frame you buy with mug shot already in it.
You know those cheap nasty $2. ones.

This is really the way to go if you have the talent to build it. I am not sure that I do. Rado makes it appear so easy and his enthusiasm is contagious.

Thanks for the link Cliff. Those Le Panyol ovens look a cinch to put together. Probably a bit too upmarket for me though.

My old man built one at home a couple of years ago. He cooked Xmas lunch in it last year and everything was cooked to perfection. The food was amazing, we didn't get to do pizza in it but I wouldn't mind building one here sometime.

They are smart little ovens. Pity I can't afford one.

What about a compromise in design between a Rado traditional and a Cob oven?

Once the base is built, construct the dome from firebricks ala Rado, but then instead of going the whole structure on top filled with insulation you cut Hebel AAC to shape around the dome and then ala Cob just free-form render the outside to make it waterproof. This would get the thermal rating up whilst keeping the weight down. Any thoughts?

I'm thinking of building one as well.

I do want to find out about the legalities of fireing it up during the fire season though. (any special safety requirements etc..)

Not here the wording is "use of fires in the open". The Adelaide hills are a high fire danger area during the summer, and if you get caught doing the wrong thing then you get jumped on from a great height (deservadly so).

Fires used of cooking are exempt..but it's still worth checking all the details. Don't really want to go to jail over a pizza. :no:

I'd love to build one of those dome ovens, but its a big undertaking.

I get by with a camp oven and or the normal oven in the house.

A couple of tips for a good pizza

use 30% wholemeal in your base it give a better flavor and texture to the base.

you need lots of heat

always drain your toppings, one bloke I worked for many years ago used to drain his pineapple pieces in the spin drier of a hover twin tub :o he also used to wash his salads in the other part.

some form of hot base gives a crisper crust if in the oven, I have a couple of large clay pot saucers for cooking pizza on. I preheat them in the oven.
I construct the piza on a similar sized round tray and transfer to the hot saucer immediately before putting in the oven.

don't overtop your pizza, most of the commercial ones are lousy but there is also a point where too much topping ruins the balance.

If using a camp oven on the fire use a trivet and a tray in the oven, get the oven good and hot then take it off the fire and add coals to the top only.

when you are making your dough dont make it too dry or stiff or it wont rise well and the texture will be poor, a sticky dough that needs foured hands and board to work is best. As moist a dough as you can handle without making a huge mess.

make sure you use enough yeast and sugar.

don't forget the salt.

Like lots of others I've been thinking of building an oven. I've an unused brick BBQ to use as a base and I've just discovered that work is throwing out 2 big heat banks full of white bricks. Anyone know if they would be appropriate for the base? They would seem to me to be the same thing as firebricks but obviously only designed for upto about 60 or 70 degrees.
Any thoughts?
