Hi Sam,

Depends on how clean the T&G is, sometimes they can be quite rough. If you dry assemble it should give you a good idea of how they will fit. I've done a piece out of reclaimed T&G boards recently and i ended up cutting of the T&G sections because they were damaged from the reclamation and transport. I put the boards face to face (like a book closing) and then ran a hand plane over the edge to be jointed. It came up perfect because any variation in angle during planing cancels out from one board to the other since you are jointing them together. It's very quick and makes for a perfect edge with minimal effort.

Personally would leave them on if they are in good condition, and that is the look you are after.

my inclination is to construct a floating panel in that situation, not one fixed in a rebate.
It's now 11 years since I made the attached floating panel -- crossed fingers but its yet to crack or split

For your design the boards would need to be unglued and I would expect the gaps between the boards to catch the bed clothes and dirt.
