    I really started to like the idea of having an edge where the polished steel shows through (like ply)
    Yeah I like that idea too. Brass inlay is pretty common and looks good, so you could achieve the same affect without having the steel go right through.

    But if you can make it work, you may have invented a new super-material!

    Just don't laminate your steel core ply prior to running through the saw to cut to size I think the steel band showing through would look nice. You could achieve the same look with a thin inlay strip. The other thing to consider is how much sanding you will want to do as the wood will wear faster than the steel. To combat this a hard backing or machine sanding will be the way to go.
