Veneer direction and bookmatching
I watched this video where Steve Hay talks about veneer having a "right" side and "wrong" side (see at 18:29):

I have two sheets of redgum which aren't sufficiently wide to span my panel; so I figured to bookmatch them. But if I do that then one half will be right and the other will be wrong.
Any advice on whether I'm doing something obviously wrong, overthinking, etc?

If the two sheets you have were not cut consecutively as a book matched pair then you will never get them to match.

Go for it, it will be fine. I pay not attention to what side i glue down generally, and have had no issues. Plenty of pro's bookmatch veneers which brakes this rule.
