Allocate "A" for a drive letter?
Going through Computer Management to change a drive letter, and it will actually allow me to use A or B (and I know they were for the old Flip Floppy drives before we had C drive). Is it ok to use A or B? I suspect it must be or Windows wouldn't offer it as an option, surely.

Yes, use them as you wish. I’ve had B: mapped to a networked “Backup” drive for years.

Edit: I forgot to add that the beauty of using A and B is that when you plug any other drive in it never wants to use those letters.

Yes by default the BIOS will "reserve" A and B for floppys but you have been able to specifically allocate them as desired since the floppy stopped being the standard PC drive. Back in the old days many programs would specifically "look for files" on A: so you had to fool it by allocating a USB drive (for instance) as A: to get around the issue. I think the only people encountering this issue now is the retro community (which BTW is huge!).
