    Default Chicken & lemon Soup

    Now that winter is upon us I have cooked this dish a few times already as it is very tasty but very simple.
    Every winter we seem to have it at least a couple of times a month so here it is.


    Chicken & Lemon Soup


    Ingredients :

    1 kg chicken thigh fillets or similar
    1 1/2 cups of chopped parsley
    Rind and juice of 1 1/2 lemons
    2 chopped medium sized onions
    1 large grated carrot
    1/2 litre of chicken stock
    8 cups of water
    1 decent sized cup of white long grain rice
    Left over carcasses of roast chickens


    Method :


    Fry the onion and carrot in a little oil on medium heat for fifteen minutes then add the chicken and cook for another ten
    Add a pinch of black pepper but no salt ( the stock brings salt to the dish )
    Add the rest of the ingredients except the rice and simmer for another twenty minutes
    Add the rice and cook for another fifteen minutes or until the meat falls off the bones
    You may have to add more water depending on how much of it is absorbed by the rice
    Discard any bones, shred the meat and serve
    This goes very well with garlic bread or crusty rolls.
