Until I made this orange cake I was convinced I couldn't bake cakes as they never usually turn out well.
However I have made this twice now and it turned out perfect both times it's that foolproof.

Ingredients:
175 grams of self raising flour or (175 baker's/plain flour with two heaped teaspoons of baking powder sieved with flour and mixed thoroughly).
100 grams sugar (brown or caster)
130 grams melted and slightly cooled butter
3 tablespoons milk
2 medium or large eggs
2 oranges

Pre-heat oven to 175 or gas mark 4.
In one large bowl add the: sifted flour, sugar, milk, lightly beaten eggs, finely grated zest of 2 oranges, melted butter.
Mix until ingredients are well combined. (flexible spatula etc is fine)
Pour mixture into a greased or baking papered tin (round or loaf tin is fine).
Bake between 30-40 mins depending on oven. Test that a skewer or fork comes out clean. Top will probably split during rise which is fine.
Squeeze juice from the two oranges and sieve to remove pulp.
Remove cake from oven, leave in tin and stab through cake several times with a fork.
Pour orange juice evenly, over hot cake.
Leave to cool.
