I may get a razz for this but.....
When the wire has come up, I get a small piece of MDF, lay the back of the blade on it, drag it a little and then (holding it in place) angle the blade up to vertical and press down slightly. The wire either pops off or perhaps leaves some small traces there which are now loosened and can be just pulled off.
The only potential problem I can see (and it has never happened) is that when the wire comes off like this it may chip the edge.

I recon what you are doing is plenty. If it performs to the standard you require, then I don't think there is any value spending your time or money on making it sharper then that.
At work all I do is hone on a 1200 diamond plate and strop it on my hand. A bit rough but does the job.
