Default Chopping board - vic ash and gum veins

Is it ok to use vic ash for a chopping board? I ask cause it isnt all that hard but also from what I understand not good with water

Also, many aussie timbers have gum veins - is it ok to just fill with epoxy or does it need to be cut out? Dont want to get food poisoning (bacteria growing in the veins)

I have done heaps of them, long grain and end grain without issues. I avoid the gum vein if I can. If I can’t tinted epoxy becomes my friend. My brother and his wife have an end grain board I made 18 months ago. It goes in their dishwasher every cycle. It is yet to let go anywhere. I use tightbond 3 for that sort of thing.

    cheers

Wow it goes in their dishwasher?! What type of finish did you put on it? Are they really good with maintenance, reapplying oil or wax?

The dishwasher will destroy it long before it's useful life has been achieved, I have only made a few from ash I only make end grain boards so it is a simple matter to discard any pieces that have gum veins, felling shakes etc.

I've had Vic ash turn a horrid greenish tinge when water gets on it. Has this happen to you?
