    Bill.

    Tried putty knifes, cut down to say 18mm long they can work hammered into timbers. But some have snapped. The knife has tapering body from 0.9 to 2mm across say 60mm.

    A leather knife might be appropriate - a bit tougher.

    At some stage should rename the knife - "wood cutting knife" a bit dull but says the intent. "Mortise knife" is another possibility.
    Not kerfing knife as I am not following a saw cut.

    The proper cutlery name for these seems to be "Narrow Plane Cheese Knife". Ham seems to have little to do with it. There are even kits available for the woodie...

    Hi Franklin

    Aware of cheese chisels. Alot of them look like they would struggle to cut camembert. You know the type of knife. They somehow accumulate in knife draw and you drag it out (when every other knife is in the dishwasher) and instantly regret the move. The cheese chisels are generally straight and single bevel

    The "ham knife" is not a delicate affair- nor is it modern. With curve front blade and taper body. I think The "ham knife" was made for cutting through gristle and sinew.

    Leather knife/ skiving knife is better choice for something equivalent - but the "ham knife" is double bevel.
