Birch root is the usual on the good ones when old man Berg used to run the place.
Apparently when his girls took over, ordinary birch was used.

Is the handle thicker than the mashed over end a bit further down? If so, why not bore a hole into a post (Like for a pepper grinder) the same diameter as the thickest part of the handle. The depth of the hole will be equal to the distance from the end to the thickest part (or deeper). Then drill a fine hole on the same centre from the bottom of the broad hole and cut the post so that you only intersect with the fine hole. Put the chisel handle into the big hole fromone end and a sharp point into the fine hole from the other end and you should get a mark on the end of the handle that shows where the centre is.

Just had a thought. The jig described above only has one reference point, so the handle may not be perfectly co-axial with the holes bored in the jig (ie the handle may lean a little in the hole). This may mean that the point marked is not the centre.
But to fix this just make a wooden washer with OD to slip into the larger hole bored in the jig and the ID to slip over the ferrule or socket. If that end is centred, then the handle can't lean. If the blade is wider than the ferrule, cut the washer in half (actually you prolly only need half a washer anyway to get the ferrule centred anyway).
