If they don't, the saw is dangerous to the point that I don't think it would have been legal to sell it.

Sorry, got sidetracked and somehow missed this post!
I don't know of any suppliers in Australia that do pure 5/8" blades, though they're pretty common in the US. Amazon, now that they're shipping to Australia again would be a prime place to hit up for some, though you'd need to make sure the items is sold and fulfilled by Amazon themselves. I know many of their Freud 10" blades are in this category, as I'm a SawStop user myself, I have a few blades on Amazon on my wish list.

I just picked up a second hand Hafco St-10SD table saw. It has a 5/8” bore, does this mean I can’t easily pick up saw blades in Oz? Mine are 10” not 12” though

Well, I went and got the arbor flange/washer and did some sanding work on it to flatten it and this seems to have done the trick. I am no longer getting any slipping under load. I have now looked closer at 305mm (12") blades at Bunnings and the likes, and it appears that most come with the bore reducing washer. I will give one of these a go in the near future and see if everything is okey dokey

These are a set of blade clamping flanges. They only grip the blade on the outer section so a 5/8 washer in a 30 mm bore should not interfere with the grip of the blade unless the washer is too thick.

Bear in mind I have a 10" SawStop, so I'm using appropriate diameter blades with 5/8" arbor.
For the work I've been doing, I've used the 40T blade that came with the saw, which does a pretty reasonable job. I also have a 24T rip blade from CMT being used with an adapter, and it performs pretty well too. I can happily look up that model number if you want the specific one, and that came from Carbatec. I've also an 80T melamine blade from CMT but haven't used it yet (also sourced from Carbatec).
I was about to pull the trigger the other day and have some blades sent out via a freight forwarder from Amazon US when I found out Amazon were shipping here again, so am about to order the following blades direct:

The 30T Glue Line Rip blade linked to by Midnight Man is my go to blade for material up to 19mm thick, can't recommend it highly enough. For ripping thicker material I have the Freud 24T blade, also excellent. The Freud 80T ultimate crosscut blade (high ATB positive rake) also does a very good of cutting laminated material (if a test cut shows some minor chipping cut in two passes flipping the stock in between). Replacing/adding new draw or door fronts in recently installed kitchens isn't a problem at all. I only use a negative rake blade for cutting aluminium.
These 3 blades are only used for finish cuts, rough cutting is performed with a combination blade from Everlast (excellent quality) or other cheaper blades that don't provide the finish of the specialist blades. My saw is 12", but I mainly use 10" blades.
To start out you could go for a cheaper combination blade - https://www.bunnings.com.au/diablo-2...blade_p6370890 - (just be aware that a blade like this is not designed to rip thicker hardwood, pretty good for crosscuts though) OR - https://www.bunnings.com.au/diablo-2...blade_p6370873 - (better at ripping but not as good for crosscutting and still not up to the standard of a dedicated rip blade) AND a suitable crosscut blade - https://www.bunnings.com.au/diablo-2...blade_p6370889. Bunnings also have 12" models of these blades available. All these Diablo blades are Freud's lower specification blades, they're still good but not as good as the Freud branded ones (smaller carbide teeth is the main difference). Gregory Machinery have a reasonable selection of the Freud branded blades if you want to buy locally.
