Just remember, this is 3-ply used to protect the good stuff during shipping. I have no idea how how good it is. It certainly doesn't have any BS1088 stamps on it! It would likely be good enough to use for side buoyancy tanks/decking etc I guess. Or a Quick Canoe maybe? It would definitely need to be painted!

Or, if you fancy a change from sailing, MIK's Eureka canoe?
2 sheets 4/5 mm ply + some off cuts left from your GIS build for 2 bulkheads and decks should be sufficient.
Use the best side of the ply on the inside with perhaps the lightest glass cloth available (not using glass tape on the inside) and then varnish?
The damaged sides on the outside, glass tape + epoxy coat and paint?

Eureka is a good idea. Might we worth cutting a bit off a corner and boiling it to see what happens. Boil for 20 mins, let it dry in the sun and then repeat.
Be sad to build a boat then have it fall to bits.
