As far as finishes go I have used danish oil on similar projects and it comes up great. It is a matt finish though protects the wood well and is forgiving when applying and touching up. Recently, I have been looking at other finishes and recently built a silky oak tv unit. I used spray poly 1 coat, then rubbed it back with 400 grit and used furniture wax over the top. Gives it a real nice gloss without looking like a layer of finish has been poured over the top. I am also interested in using a hard wax finish but as yet haven't got around to it. post some "finished" pics if you get a chance....

Good on you for the rescue, there's a heap of character in that timber. I'm really impressed with the result too.

so i decided to go with danish oil. the top has two coats at the moment and the bottom has 1 coat, its still not 100% dry so it does look a lot darker. After the first coat on the table top it looked very very dark, however after a few days letting the timber soak up the oil it returns to a clear finish (probably should post a few more photos after it 100% dry)
