If you put any new surface on the inside of the wall without stopping the moisture (inside or out), you could end up with big mould problems between the wall and the new surface, and it will smell.

Building a stud wall inside an existing brick wall with an included cavity is no different to a new brick veneer house, just built in reverse order. Put termite grade poly flashing under the bottom plate as well and fold up each side of wall before lining. As I stated previously, include vents top and bottom to allow air flow ventilation
