The last set of ribs I put in a small boat (this last spring) were made from PVC. I did this because they were more decorative than anything else and PVC is very easy to bend with a touch of heat.
As to your issue, it's hard to tell, but generally, small dimensioned ribs are used on close spacings, while fatter dimension ribs are more widely spaced. As to how many you need and their dimensions, well you'll likely have to just try out a few and judge for yourself. Small dimensions might be 3/4" x 1/2" laid on the flat on 7" centers. Larger dimension ribs might be 1 1/4" x 3/4" on say 12" or 14" centers.
Personally, I'd use a spacing that fits your thwart (chair) supports. For example I'd place one between the foredeck and the first thwart cross brace, then one under each thwart cross brace. Next another one, just between the center brace and the next under the center brace. This makes them about 12" on center. As to the physical dimensions of the ribs themselves, I'd play around with different ones, until I found a size that looks good, not to beefy, not too dainty. It's an eyeball thing and given your work thus far, you eyeball will make the right choice.
Yes, I'd glue these in place, so you'll have to remove the finish you have down. I'd apply some tape on each side of where the rib will live and grind off the finish, stopping short of having it peak out from under the rib, once installed. This way, you can apply a bead of goo, place the rib and the finish will still run right up to the edge of the rib, without having to do much touch up.

That is a lovely looking canoe. I just love the contrasting pattern on the hull. Well done especially for your first build.
