Default Fibre glass sheathing the external longitudinals.

I am in the process of building a Spira Seneca dory for my son to fish the inland rivers & lakes. It is a 4.3mtr. flat bottom dory with about 300mm lift at the bow. I am about to fit the 9mm ply sides and then the outer gunnel and chine longitudinals.. My question is should I glass the outside of the hull before I fit the outer gunwale and chine longitudinals ?Seeing as these timbers are rubbing strips if I ever have to replace them it would be much easier if I didn’t have to cut through the hull sheathing glass. I would sheath the hull first with two layers of 6 oz. cloth and then fit the outer chine member and gunnel and sheath them individually with say 6 inch wide glass tape and would then only have to cut through that without disturbing the main sheathing if they ever needed replacing. I also plan on fitting a false keel about 3-1/2” x ¾” and a couple of strakes as well(runners) The same query applies to these – should I sheath them with glassseparately?
    Any thoughts on this?

Yep, that's the proper way to do it. The pieces you've described are considered sacrificial in nature, which requires they be removed, repaired or replaced from time to time, so they are "bedded" over the hull shell, with any sheathing also below.
