A few suggestions would be Queensland maple, Poplar it’s hard in Oz as maple has a a lot of sugar and grows in very cold climates and very closed grain which makes it very stable. Most Australian hardwoods are not stable enough for musical instruments. Australian Blackwood and Gidgee are some good woods.
Cheers Peter

Why not purchase US Rock (or Hard) Maple? It is available in Oz. Nice to work.
