Grandma Sheldrake's mango chutney recipe.
It was a prize winner at the Sydney Royal Show for years.
MANGO CHUTNEY.
12 large green mangoes.
1 tablespoon ground ginger.
1 pound brown sugar.
4 red chillies.
1 tablespoon salt.
1 tablespoon mustard.
1 cup treacle.
1/2 pound chopped raisins.
1 large onion, chopped.
few pieces green ginger.
1 bottle mild vinegar.
Peel and slice mangoes and boil until soft in half the vinegar, together with other ingredients EXCEPT sugar.
Make a syrup with the sugar and rest of vinegar.
Add the mango and boil all till fully thickened.
Bottle when cold.
This is great on cheese sandwiches for snacks.
This was my Mum's grandma, my great grandma, so this receipe is now likely to be about 100years old.
Back then, we are not sure what size a 'large green mango' was 'cos they hadn't started messing around with all the hybribs so it is possibly not large by today's standards.
We are also not sure how big the bottle of vinegar was but as far as we can tell, it was about 26oz. (750ml)
We are guessing that 'mild' vinegar was white vinegar & who knows what a 'red chili' was 100 years ago or what sort of mustard they would have used back then.
Gina (Italian heritage) has had a go at it & we ended up with a LOT of chutney but it is damned fine stuff.... goes well with cold meat sandwiches.
