In Sydney an average cost to demo is about $10,000. In Sydney you can put the application for demolition in with the application to build the new home. But I guess every state is different.

Pine would most probaly be ok as its up and under...
Pine would most probaly be ok as its up and under the eave and wouldnt really get wet. Most probaly would be the chepest. Can also get in a plywood form which is used for exterior panneling.
