You could use a normal grinding disk, it just happened to be that a flap disk was already in the grinder, and anyway the flap disk leaves a smoother finish.

Not until I unpack and resolve the discrepancy with the number of handles. Then I'll be only to happy to provide an update.

The reason things warp when quenched is just the rate of shrinkage. When you quench, the steel shrinks, if the thing is assymetrically cooled, then it will warp.
