Yes, it's never been a problem keeping them flat.

I agree, if You do a good job of jointing the boards, the glue bond will hold it together. Tightbond III is good stuff.

If the slab needs a fair bit of flattening, go for a belt sander mate, then follow up with a ROS or half sheet. The Festool belt sander, with the frame takes some beating.

I've used the Shapton M's, they seemed to wear rather fast, but were hard to flatten.
That's what I liked about my King...

I've got all three of those connections on my table.

I put it on a base made from walnut.
The top is about 210cm...

Black cherry and Maple.
All joinery is mortice and tenon, the table top is attached via buttons.
