Hi , Work to Fish (as a keen angler , I have to say I like your nickname).Take a look at Amazon- last time I cheked , they had about 800 carving -related books . I'll lok for it this evening , when I have more time , but I think there was a book called " A treasury of woodcarving designs" ( or something in this sense ), published by Dover , with some terrific Gothic stuff on the cover.
It's a slow and painful process...the secret is, dont mind the pain.(Ian Norbury)

You could try here: http://www.woodcarvingpatterns.com/greenmen.htm
or try googling
'gothic+carving+pattern'
Seems to be quite a bit of stuff. Not sure what you're looking for but there should be something close to the mark.

For culture-specific designs of many ages, it's hard to beat "The Styles of Ornament," by Alexander Speltz. Dover ISBN 0-486-20557-6. Still in print, and likely available at your local library, or via inter-library loan.
Plate 135 (p.239) illustrates some carved finials as stylized fleurs-de-lis in French Gothic, with four or eight petals, and/or four sub-petals.
