    Default Japanese Kitchen Knife Set

    I have to apologise as this probably will seem a little like deja vu, but recently I was asked to make up a set of kitchen knives for SWMBO's sister for her 60th birthday. The person in question loves cooking for dinner parties, but doesn't have a single good knife. Originally I was going to buy two or three knives from Japan and re-handle them, but somehow the sisters got together and decided the birthday girl needed a set so here it is.

    For simplicity I went with the Zhen knives which are made in the damascus style from VG10 steel. We have a couple of them and they are good, no-maintenance performers which are sharp enough for most purposes. The handles, which is my input, are Bull Oak. It comprises from the top, parer, small santoku, gyuto, bread, nakiri and cleaver.

    To keep them safe we needed a block. This time I relied heavily on simplicity, although I used what was lying around. This happened to be some Spotted Gum and the corners are Bull Oak to match the knives. The pix tell all .

    Great knife block and great knives.
    Are they all from the one maker and who was it?...( ahhh found them)

    Although the handles were varnished, just for durability and easy maintenance by somebody who will just want to cut with the knives rather than cosset them, the block was treated differently and had three coats of danish oil (Rustin's) with a wax (Ubeaut) on top.

    I thought a dose of Spotty might lure you out .

    "El Presidente." Would I get to wear a smart uniform and would that include a sword? I'm thinking samurai style with.....a Spotty handle .

    Yes, entirely appropriate. Spotty for the tie and ePaulettes too. Hat diameter - minimum 10% larger than either North Korea or Russia (whichever is the larger - quite a contest they have going there). Suit - something from David Byrne's wardrobe should do.

    Not quite sure how that will sit with Brett. Perhaps we could create the position of "Enforcer" for him whereby he ensures everybody posting has to formally apologise if they were unable to make an object using Spotty. In dictatorships it's only a free world if you do what we want .
