I am toying with the idea of coverting one of the elcheapo compressors to a vacuum pump, which is mainly just simple plumbing.

Any thoughts out there about either converting the outo pressure switch or what to replace it with?

They don't work very well. The seals are designed to keep a pressure grade in one direction & vacuum pumping is the wrong direction. Harbour Freight have a venturi vacuum pump that would work off the compressor - but their shipping fees are ridiculous - $149US for 2 x $10US venturis!

I have heard of people getting reasonable results from an old fridge compressor which is easy to plumb up as a cheap sucker.

have a look at http://www.cloudmaker.net.au/. They have venturi systems and BIG 240v driven electric suckers - plus all the other stuff like bags, seals, gauges.

I use the vac clamp setup, which included the switch. from memory the switch is around $30.00

compressed air to vacume venturi type devices can be baught from norgren in you state.
