View Full Version : Best BBQ chicken marinade

Had a 21st on the weekend and this was such a hit that I was asked to post the recipe.
BLEND- 1cup of olive oil, 1/2 cup tamari, 2 long red chillis, 5 cloves garlic, teaspoon hot chilli powder, 3 strips lime zest cut with veggie peeler, thumb sized lump of ginger...
ADD- good handfull of finely chopped sage, rosemary and thyme from the garden...
MIX- all the above with 2 kilos of chicken thigh fillets cut into pieces (2 or 3 per fillet)
REFRIGERATE- 24hrs
HOT BBQ- Two or three minutes each side.

Can be served with bread or just pick up with the fingers and eat hot.

nice receipes will try next week.just one comment next time try to add 2 table spoon mustard oil and see the magic :)
well from my side 1 kg chicken any part is ok would be nice if thigh.you need to do two marination the first one lemon juice,one tea spoon red chilly powder or you can use peprika also,salt rub this mixture on chicken and put it for atleast 1 hour and then take one cup hung yogurt,one tea spoon cumin powder,one tea spoon corriandar powder,half tea spoon turmeric,one tea spoon chilli again and one tea spoon garm masala,4 table spoon mustard oil if not avaialbe you can add olive oil,around 5 gram fenugreek leaves crush with hand it will turn to powder,salt to taste.mix it well and coat on chicken.leave it for 4 hours in the fridge or you can leav it longer.now time to bbq.do it as usual and squeeze lemon and enjoy with beer ;)

Chinese recipe.... dont laugh this was given to us by a highly ranked chinese chef.

1 can of normal coke
drink 1/3rd
top of with soy sauce
mix with flour
pour and bast over chicken.

My favourite chicken marinade is
For every large piece of chicken
1 Tbspns of Whole Egg Mayo
1/2 Clove of Chopped Garlic
1/2 teaspoon of chunky Mango Chutney
1/2 teaspoon of whole grain mustard
Mix marinade ingredients and marinade chicken overnight in fridge.

Cooking time is not so fast but the caramelised flavours are pretty nice.
