View Full Version : upside down quiche/ impossible pie

I've made this several times and it always works out and with the zucchinnis coming along nicely i will be making it again soon.

preheat oven to 175 c

into a bowl put
1 = cup of pastry mix
6 = eggs
1 = onion diced ( i prefer raw but you can cook with the bacon )
1 = cup of grated zuchinni, unpeeled
250 = grams of grated tasty cheese or ( 1 cup )
1 = cup chopped and fried bacon
1 or1/2 tbl spoons of milk
1 = tomato sliced
small amount of butter to grease dish
mix all together and pour into 23cm pie dish then garnish with tomato slices, (form a circle with them with one in the middle )
bake for 40 minutes.

Can be eaten hot or cold with hot chips and/or salad.

What is "pastry mix" ?

And also, do you turn it out upside down? Does the pastry come to the top?

Ready made pastry mix can be bought in the super market. (it's where i get mine from )

Once it's all mixed put it in the pie dish.

when it's cooked the pastry is already on the base and sides. Hence the name impossible pie ( i think ) lol

I have seen sweet versions of this. ... In fact googling impossible pie gets a bazillion results. I might have to try some of them as well. :D

Yeah, ditto. No pix, it's a myth. However that can be redeemed.

BUT, it smells like a really good, old-fashioned fritatta with a crust.
Quite a good twist on an old dish and a scratch crust trumps store-bought.

I'm tough. No crust on the fritatta tonight.
Peppers & peas & onions & tomatoes and hot Mexican salami.
And, lots of Tabasco to wake me up.

ok so i added extra cherry tomatoes. I have them growing and it's only for me. Two dinners and a lunch i think.lol
