Any advice on seasoning/drying olive, almond, or orange? I'm new to Spain. thanks Stan

Iv'e got some olive which was just quartersawn and sealed at the ends with wax (some use paint). I have had it for about 4 years now and it appears to be dry although I have not used it. Cannot comment on orange and almond.
Have to ask, where is Les Cases? been to Segovia and Asturias.
