I'm looking at buying some stainless steel sheet and the buyer doesn't know what it is but he knows it is 400 series, a magnet will stick to it and it's highly polished. IDK if 409 can be highly polished or not, but it looks like 409 is the least expensive type.

I was wondering if there are any tests that can be done with it to narrow it down to the right number. I was wondering if I could get a sample and take it to a scrap yard that has an XRF meter/analyzer if that could give a good idea of what it might be. If getting a sample isn't possible, are there any other ways to figure out what it might be?
