How slow do I have to be able to get down to to chase threads? I've seen people recommend around 350 RPM but some say a bit faster is do-able.

If your new to chasing threads go as slow as your comfortable with, much depends on the quality of the timber being used.

As Hughie said, if you are new to hand thread chasing, 350 - 400 rpm is a good range of speed. At less than 350 there is a tendency to produce a "drunken" thread, that is a thread with a kink in it. Faster than 400, you are likely to strip the thread, again if you are starting out. Start with 20 tpi chasers.
