1 breast fillet per person
300ml thicked cream
1/4 cup amaretto
Peach slices
Flaked almonds
Pan fry the chicken breast in butter and olive oil until cooked through and golden brown, place on a plate and keep warm in oven, drain pan and add thickened cream and amaretto, reduce and add peach slices.
Arrange chicken and veges of choice (I like Swedish potaoes and brocoli with this) top with the sauce and decorate with peach slices, sprinkle over almond flakes and in about one hour you will be on a promise:2tsup:
Rice timbales also go well with this, quantuty of frshly cooked rice, mix in grated good quality parmesan and peas, press into timbale mould and serve.
