Guacamole

Mash a couple of ripe avocardoes in a dish, add some chopped shallots, peel, seed and dice a nice ripe tomato then add, finely chop some jalapenoes and add then add some lime juice, a good dash of lime juice (not lime juice cordial :(( )

Just love a good guacamole.

Your recipe needs garlic. A couple of cloves of garlic really gets a guacamole singin' and dancin'.

I can never be bothered seeding and peeling the tomatoes. I just finely chop it. It leaves little lumpy red things in the guacamole which look kind of cool.

Garlic is to strongly flavoured for guacamole, I used to do it, but stopped once I realised it was better without. :D
