View Full Version : How do i joint a rabbit

Never having cooked rabbit before i would like to know how to cut it up,
any tips on where to start without losing or spoiling the meat.

When my wife cooks rabbit if she is baking she bakes it whole and stuffs the rib cage with bread and herbs and when she serves it she cuts it up with a pair of chicken shears. The hind legs off then the back into a couple of pieces and then we just suck on the rib cage and front legs.

If she is frying it she cuts it up first into pieces with the chicken shears. She cuts the hind legs off, cuts the back into two or three pieces and splits the rib cage in half down the spine and leaves the front legs on. Dunked into egg and bread crumbs and fried. Rabbit that tastes like tender chicken.

Now that is for wild rabbit which are a bit smaller than caged bred rabbits.

My mum used to use a small hachet - split it in half down the backbone, then lop the back and front legs off and chop the remaining carcass in half or thirds.

I still remember the rabbito who used to come around with his FJ ute full of live rabbits in hessian bags. We all had to go inside but could watch from the lounge room window. Mum and the rabbito would haggle for a bit and then go behind the ute and he'd kill the purchases and mum would then come inside with a pair of freshly killed rabbits. They would hang high up in the wash house for a while before being butchered.

Ahhh, it brings back memories.

Carrying 80 traps out into the evening and setting them
before retracing our steps and plucking the bunnies from
at least 60 of them on the way home. Up again next
morning to go and pick up again.

Even better fun was traipsing around the hills with the
ferrets, diving on the nets from precarious embankments
when the bunnies bolt into them. Keeping the flies off
was always a problem on the hot days. What a challenge.

Last time I went out I was about 60 years old and found
that my energies were exhausted quite quickly. Nevertheless
we came home with 68 rabbits from the Heathcote area.

Brings back memories.
5 bob a pair from the meat works.
Rabbit stew, baked rabbit, fried rabbit, rabbit casserole........

Used to like getting the kittens and baking them whole, one per person.
