View Full Version : Best "shavings" to burn?

One of my neighbours recently asked me if I had any Hickory shavings as he wanted them for his barbie to smoke some fish. This got me to wondering what other timbers lend themselves for flavouring different meats on the barbie :licklips:. Feel free to weigh in on this one :D.

Oak (english or american) is used to smoke fish. I am sure there are others.

I've used Red Gum and other eucalypts to smoke chicken & fish.

Best Aus. stuff for smoking is Bluebush and Saltbush.
Surprising but true.

Not a shaving, but add fennel (the bushy bit) to the fuel mix and it will add a distinct fresh aromatic zing to fish. It grows wild along the railway here.

Mesquite, here in the upover is good barby wood. Also Hickory... Don't know if you have Hickory there, but I'm sure I've heard that you have Mesquite, tho it may be a different variety.. :)
