It will soon be Australia Day and at lunch time and I know that your BBQ will be fired up, but what about the "Afters".

The Damper is all Australian and just the ticket to fill the space left after the barbie,.

4 c. self-raising flour or 4 c. plain flour & 1 tsp. baking powder
2 tbsp. butter, butter or dripping
1 - 1 1/2 c. milk (butter-milk if your deli has it)
1 c. grated tasty cheese to top the damper off

Mix dry ingredients, rub in butter (or mix as with pastry dough), add enough milk so that dough is slightly sticky but can still be kneaded. Turn dough onto well floured surface, knead it into a flat ball, flatten to about 2 inch thickness. Score dough into wedges with a plastic steak knife (from the BBQ cutlery set) so that it can be pulled apart after baking. Top with the grated cheese. Bake at 425F degrees for 15 minutes, turn oven down to 375F degrees and bake for another 30 minutes or until golden brown on top. Knocking on the damper should produce a nice hollow sound. Pull apart wedges, butter and eat with meal.
