Green or Dry carving
For a burl about 30cm deep and 60cm diameter when would/should in be worked? ie should it be roughed out whilst it is still green and then wait for it to dry out before finishing or wait a few years for it to dry and then work the harder timber. The type of timber I'm talking about is the likes of the west Australian Samon Gum which is a pretty dense/hard timber.
Thanks for your advise. RodExperienced in removing the tree from the furniture

It would be better to work the wood dry, if possible.

Yes burls are just as vulnerable as straight grained timber to twisting and cracking as they dry out.Moisture content for eucalyptus burls probably needs to be down below fifteen percent to be safe. They also dry very nicely in a microwave but I doubt you will find one big enough for that piece.
