Welcome kobold
Very good question, Like you, I am waiting to see the replys you may get.
My suggestion would be all the mallee burls and of course my favorite camphor laurel
We will see what comes forward.

I did a quick search to see what knife scales were and came up with this:
Knifescales and Custom Knives
Local timbers seem to be:
- Redgum
- Jarrah
- York Burl

G'day Kobold, TASMAINAN PINK MYRTLE BURL,is a very nice looking timber, I think it would look great on a knife handle. CD.

Ive used Tassie Blackwood, Gidgee, Mallee Burls, Silky Oak, QLD Walnut and Tassie Myrtle with great success. There is also Pacific Blackwood (Solomon's Ebony) to consider. The vendors on this forum will help you out Im sure.
