wilkommen! I had a look at the link you posted and in all probabilty those signs were done on a CNC router. (Computerised machine worth tens of thousands of Euros) You could do pretty much most of the lettering with a router and some templates. If you really want to do it by hand there will be some people hereabouts that can help you with those techniques and tools. Me, I tend to avoid things I can't automate or at least get a machine to do most of.
