Seemed natural for me to use the common carving woods here in the far west.
Western Red Cedar (Thuja plicata), Birch (Betula papyrifera) and Yellow Cedar (Chamycyparis nootkatensis).
WRC & Birch are local and inexpensive, YC is costly ($7/bdft). Just hand tools.
