My assembly table is covered with form ply. I know it is not the same as this product but it works well. I cover it with paper off a roll when painting so that it is not covered in uneven layers of paint. Although it is a work 'bench' so it is also a long way from being pristine. But mostly it is smooth and flatish. I have it screwed in place and I have already turned it over once, when one side got too daggy. By the time both sides are munted it would be time to replace anyway - which is easy because it is just screwed from below.

Valchromat update
Hello Dennis!
First off, great work on your bench and the new shop! Your videos and website have been a great source of information for me as I go about project managing my dad's dream workshop build out.
I procured 30mm Valchromat that we'll use for bench tops and sides. And on your advice, I splurged on the UJK Parf Guide.
My question is how well have the work surfaces held up over time?
And do you think the Valchromat would hold up to the abuse of being used in a Moving-block Tail Vise design similar to what Benchcrafted uses with their STR bench? Video close up of the vise.
