Mathews Timber in Rooks rd, Vermont Vic have a good selection of Australian and imported timbers. I bought from them in small quantities, american white oak, mahoganies and NG rosewood. The allowed me to select my own boards and also dress it for you like.

I recently purchased about 15 lineal metres from Britton Timbers in Dandenong. They were very helpful and the quality was excellent. Only downside is that you can't see and feel the boards like you can at Matthews.

West side of Melbourne, I'd give timber zoo a go just outside of Geelong. Right where Carroll's used to be (so I always managed to make a double purpose trip) but they have a great selection of timber and are happy for you to pick your pieces.
