Chopping board material.
I've been told by many other that certain types are usable and unusable in the construction of chopping boards and I wanted to get the take from everyone here.
What are the usable and health friendly species of timber to use?

Kauri pine is food safe and fine with being in water; used to be used for beer vats. Bit expensive though

+1 for kauri, one of my turning failures ended up being used as a food platter for guinea pigs and it regularly went through the dishwasher.
I also have a big 2" thick one made from an oregon pine plank that is usually used as a cheeseboard.
Camphor laurel is probably the most popular material I've seen around Queensland; it's claimed to be more antibacterial than normal woods. Personally though I don't really like the look of the timber.
