When I built my new kitchen I used Blum push-to-open, soft close, premade drawer sides. You can get those at least in two heights ... I used 90mm and 175mm ones. Stands to reason in my opinion that they can't offer any old height, they already offer many different lengths; and of course you can build the space around your drawers to whatever height you want. Pot drawers certainly needed more than 175mm cabinet space. Works/worked for me in this instance. (And the drawers still work beautifully after 18 months of intense use.)
But when I use more conventional side or bottom mount slides, I do tend to build the drawer to the same height all 'round, with maybe an extra front cover, depending on the piece of furniture. Always prefer wood to reconstituted sawdust ;-) since it's a lot less likely to tear out.
