I think it's for competition, but yes they do use those kinda shavings for wrapping things up. Usually food of some kind.
Kinda like what the shakers used to do to get the thin stock for the boxes they made. Can't remember the name of the plane, spelking plane or something like that?

What's that on the bench? It looks like a large timber bodied plane (around the same width as the one in use) with five staggered baldes in it.

Strewth! That IS impressive!
It would take a bit of skill to pull such a clean, continuous shaving, but nothing like what it took to make the damn plane & fettle it. With an edge as wide as that, getting it deadly sharp & straight from corner to corner by hand is a real test.

That competicion have strange name keruzokai or something like that. That plane must cost over 1000 US$.
