Welcome.
Best way would be to go to bunnings and buy some "rightangle" brackets. They come with predrilled holes for screws. Choose a thickness that you can bend to the angle you need to make the platform level. Screw the platform to the brackets or drill and bolt right through.

Unfortunately the only works if the branches are already vertical and chances are that some will be on a slope.
One way to get a cat post level would be to locate the cat tree, and a laser level close on a stand close to the cat tree on the same level floor.
Turn on the level
Raise the laser stand to the required height
Mark the height on the side that the laser strikes,
Rotate the cat tree and keep making
Adjust height as required for other branches.
If the platforms are still not dead level you could shim the posts of undersides of platform with some thin cardboard. If you can "wing" the cuts close to level you might not need the laser level at all.

9” Torpedo level held against the branch, level bubble, mark the branch, cut to line.

Cut one branch level, using one screw, attach a straight length of timber to it and then pivot the timber with a level attached to the next branch mark and cut, then to the next branch and so on.

Or you could use a Line Level (not sure what they are called in your country) as shown here. Just start from the highest point you want your house at and proceed as per apple8 instructions. Just do this on the larger outside branches and cut any smaller ones in between out of the way if not needed.
