For my intended use 18mm plain MDF will do the job as it is only an assembly table. I wonder how slick impregnated MDF is, form ply could be used but it is always very cold to the touch and very slippery as well. I would use 25mm MDF for my table but it is so damned heavy and it won't be a permanent fixture but stored vertically when not in use. If I could figure a way of doing it I would make a light weight torsion box of perhaps 6mm MDF for the skins but then the dog hole locations would have to be solid between the skins and doing that would be damned difficult. It is no good building a torsion box unless it is very light if it is going to be moveable.
