I use my offcuts for spoon carving, carving small figurines, making jigs, making pegs (both for fastening timber and for holding packets shut, laminate them together for trivets, cutting boards, coasters etc.
There's heaps you can do with them that take no time at all and make fantastic gifts (fantastic for the giver because now the scrap is someone else's problem and they have room for more scraps!) Or you can even sell them cheap at markets if you're that way inclined.
