Try a local woodworking club.
I'm sure that you'll get some more specific help from Brisbane based Woodies...."Clear, Ease Springs"

This link from Aus Wood Review lists several in and around Brisbane. Most of them teach furniture making, but one covers antique restoration and Don Powell at Maleney teaches woodcarving.

Jodee,
I go to classes at Bywaterdesign in Northgate. It is run by stuart bywater. He runs classes on Monday and Thursday nights. The classes are fantastic in a nice and relaxed atmosphere. Stuart is a really good bloke and a great teacher. He has a website up and running. www.bywaterdesign.com.au
Cheers,
Garry
